A special generation of Seminole leaders - children of that last generation to hide in the swamps - began to meet regularly beneath a huge oak tree on the Hollywood reservation. With its namesake taken from this historic oak tree, “Council Oak” is the hotel's signature restaurant that offers intimate indoor seating or patio dining. This modern wood paneled dining room features an extensive wine list by the glass and has quickly established Council Oak as one of South Florida's leading restaurants. Council Oak’s main dining room now features new Crossley Axminster carpeting, updated leather Dakota Jackson chairs and Carnegie draped partitions in shades of burgundy, sienna and gold to complement the existing traditional rich, warm woods and hand-painted décor accents. Freshly-covered banquettes feature a matching burgundy scroll motif and leathers from Donghia, Innovations and Kneedler-Fauchere that lend a contemporary look and luxurious feel to the restaurant. Central to the dining room is the installation of an oversized glass-screened rendering of the Seminole’s legendary and revered Council Oak Tree. A special commission, the eye-catching art was designed by Disney graphic designer Tami Miller. On balmy, nights, diners may choose to relax and enjoy meals on the Council Oak terrace which also features upgraded all-weather resin weave furniture by Walter Wicker. You can dine where the Seminole elders used to gather round the council oak. How cool is that?
